Banana Bread

DSC05216Banana bread is one of my favorite things to bake…I don’t like to eat it but I’ll definitely bake it for anyone who asks…Until now! You have the recipe so now you can make it yourself! Kidding!! I’ll still make it because I love the way my house smells while it bakes.

This recipe will make two medium loaves

Alright lets start out with the pre-heat

Pre-heat oven to 350


2 cups of AP flour
1 cup of sugar
3-4 (depending on size) very ripe bananas
1/2 tsp Vanilla
1 tsp baking soda
2 tsp baking powder
1/2 cup (1 stick) of salted sweet cream butter (plus extra to brush pan)
2 eggs
1/3 – 1/2 Cup chopped pecans or walnuts, chocolate chips, cranberries etc. (these are all optional. Good but optional.)


  1. Melt butter
  2. Mash bananas
  3. Add eggs and melted butter to bananas
    (I found that it makes it easier to mash the bananas if you add the butter and the eggs while you mash them.)
  4. Add sugar and mix well
  5. Add vanilla
  6. Mix all dry ingredients together (Flour, Baking soda & Baking powder)
  7. Mix dry ingredients into banana mixture 1/2 cup at a time making sure you mix thoroughly
  8. Add all of your optional ingredients now
  9. Brush the pan with melted butter
  10. Add dough to pan(s)

I like to add a piece of parchment paper to the bottom of the pan so the bread doesn’t stick. (Cooking spray doesn’t always work for me on the bottom)
Remember…Just to the bottom NOT the sides

*Bake for 30-45 min for multiple pans
*Bake for 1 hour for one basic loaf
Test middle with butter knife to see if it is baked all the way through making sure the knife comes out clean

*Butter lovers side note-Add melted butter to the top of the loaf before cutting
