It’s TACO TUESDAY!!!!
Ingredients
1 Lb of Salmon
Cajun Seasoning enough to season both sides of the salmon.
Cajun Seasoning is a spice blend that I found at the farmers market. I have it listed in my seasoning list posting a little later. I will link it here.
Jalapeno Lime Slaw
Any type of pre-made raw slaw that you like. My favorite is broccoli slaw.
1/2 cup mayo
1 tbls fresh lime juice
1 1/2 tsp rice vinegar
1 tbls sugar (I used 2 tbls of Agave Nectar) more if you want a sweeter slaw
1/4 of a red onion minced
1 tbls fresh cilantro minced
2 jalapeno peppers, one seeded one not. More or less to your taste.
Salt and pepper to taste
Directions:

Air fryer
I made my salmon in the air fryer
Season both sides put it in the air fryer at 400 for 8 minutes and it will be perfect.
I then broke it apart after removing it from the air fryer.
Pan Seared
Season both sides
Add a little olive oil to a pan and cook 4-5 minutes each side
you can break it apart while searing it or after it is done
*Jalapeno Lime Slaw*
In a medium bowl, whisk together mayo, lime juice, rice vinegar, garlic, and sugar until the sugar is dissolved add in the cilantro & red onion.
Add slaw mix to a large bowl, add the mayo mixture a little at a time, tossing as you go, until everything is coated as you like. Cover and keep in the fridge until ready to serve.
Let me know how you build your tacos. Is it meat and then lettuce/slaw and then topping or lettuce/slaw first and then meat and toppings?!? However you do it go ahead and build your tacos and enjoy!!!
Option’s & add in’s
This can easily be made into a salad. Just add your protein to the top of your slaw.
You can always use other protein like chickpeas, Sauteed Shrimp or Shredded Chicken. Ooooo what about brisket?!?! Somebody do it and tell me!
