Broccoli Salad with Almonds & Blueberries


DSC02394It was a nice 84 degrees today and I wanted something light and refreshing so I whipped up a nice broccoli salad and I put some salmon it the air fryer.  I could’ve eaten this all by itself because it’s THAT good!

This is one of those recipes where you only have to get one thing right and that’s The dressing!! After that add anything you want!!!

Ingredients 
3 Heads of fresh broccoli
1 cup of mayo (I used Vegan Hellmann’s Mayo)
1/2 cup of sugar
1/4 cup Balsamic Vinegar
1/4 cup sliced almonds
1/2 red onion
1/4 cup dried blueberries or cranberries (optional)

Directions
Cut broccoli into florets
Chop red onion
Whisk together Mayo, Sugar, Balsamic Vinegar
Add in onions and whisk together.
Pour mixture over broccoli and mix together well
Top with almonds & Serve!!!

Fun add in’s…
Bacon (for the non-vegans)
Flax seeds
Chia seeds
Switch out the almonds for sunflower seeds or any nut or seed of your choosing
