Chicken, Broccoli & Cheese Casserole

Chicken & Brocc

This casserole is one of my favorites from when I was a little girl, my mom would make this with some of those good ol’ brown & serve dinner rolls dipped in butter. I added rice when I got older and had to feed a large number of people just so I could stretch the recipe a little more!


  • 1 lb of chicken breast
    • Boiled for about 20min depending on the size
    • Shortcut – Use a rotisserie chicken from the deli
  • 2 Cups of instant rice (white or brown)
    • Follow directions on the package
  • 1 bag of frozen broccoli
  • 2 Cups of mozzarella cheese
  • 1 Cup of cheddar cheese (set aside)
  • 4 tbls of butter
  • 1 tsp Garlic salt
  • 2 cans of Cream of chicken or Cream of Mushroom soup (Either is fine. I use one of each)


Preheat oven to 350 degrees

  1. Boil chicken for about 20 min depending on the size
    • Shortcut – Use a rotisserie chicken from the deli
  2. For the rice follow directions on the package
  3. Follow directions on broccoli
  • Once chicken, broccoli and rice are done…
  1. Place butter in an 11×17″ pan and place in the oven to melt. Remove from oven once butter has melted.
  2. Place chicken in a large bowl and shred
  3. Add soup, broccoli, rice, mozzarella cheese & garlic salt to the bowl and mix together well
  4. Spoon mixture into buttered pan
  5. Top with Cheddar cheese
  6. Bake until cheese is golden.
