Sour Cream Chicken Enchiladas


  I wanted something different, I knew I wanted an enchilada but I can’t eat red sauce so I had to find something else. I found so many different versions of sauce. There was red sauce, green sauce and even a pink sauce, but I came across one that I knew I could change and make my own version that I could eat without it being red or super spicy so here is my new video for Sour Cream Chicken Enchiladas

Here are the ingredients:

3 cups of chicken breast cooked & chopped

2 Tbs. olive oil

2 Tbs. butter

1 medium onion finely chopped

1 cup sour cream

2 cups chicken broth

1 chopped tomato

3 Tbs. flour

2 cups shredded Mexican Cheese blend

8-10 corn tortillas (I don’t like corn tortillas so I used flour)
