Black Bean Burgers…L’Erin’s Way


Our church is on a fast during Passover with fruits and vegetables only, so while everyone is around here eating the never-ending salad & stir-fry, L’Erin got creative! I searched the internet for different ideas and I saw “Black Bean Burgers”, they looked good so I decided I wanted to make them…BUT I was making them my way!

They came out great so I thought I’d share it with you all!

Here we go…I’ve been super busy all week so I knew this was not going to be a “soak the beans over night” kind of meal this was going to be a “I have an hour to make this happen before I pass out” kind of meal so at 11:30pm I started.

Ingredients

1 can of black beans (drained)

1 can of sweet corn (drained)

1 handful of baby carrots (chopped)

1/2 green bell pepper

2 green onion stalks

1/2 red onion (chopped)

1 tablespoon of fresh cilantro

1 Tbsp Taco Seasoning

1 tsp cinnamon

1 tsp salt

1/4 cup bread crumbs

1 Flax “Egg”

There’s no need to chop these finely because the food processor will do all the work for you. If you don’t have a food processor you can use a blender, if you don’t have a blender…throw all of this in a pot add some vegetable stock and make soup!

 

 

You can use any type of binder such as panko, bread crumbs, white or brown rice, it’s whatever you want to add. You can even add an egg to add firmness.

Add the spices to the processor and turn that baby on! While the processor is running you can add a few table spoons of olive oil.

When it is done processing it will look like a weird brown mixture that might make you change your mind of eating it but just think about how raw meat looks…Yep, I went there! Ready to finish? Let’s go…

If you are super hungry you can go ahead and drop these on your griddle or pan , if not you can put it in the refrigerator for about an hour and let it firm up where you can form them to look like actual burgers.

Leave it on the griddle or pan until you see a crust start to form around the edges of the burger and it’s ready to flip, it will be soft in the middle so be careful when flipping it.

 

5-6 min on each side over medium-high heat should work fine.

Once they are done top with whatever you want. Not Bacon!!! That just defeats the purpose of eating a veggie burger, but I am not one to judge and I like bacon so I say GO Fot It!!! I topped mine with fresh guacamole (recipe on next blog)

Enjoy your “burger”! Remember: Healthy is the new sexy!!! So is a really good desert but this is a healthy recipe sooooo just be sexy with this one for now!

    Sounds delightful and looks good. The peanutbutter brownies you make are probably gonna be as close to eating healthy as I get though….lol.
